Why is white pepper white?
In contrast to white pepper, black pepper is harvested in an unripe state, i.e. green, and then dried. With white pepper, however, the fruits are harvested fully ripe . When the first signs of red coloring begin to appear, the harvest time has been reached. In the next step, the fruit is put into bags and watered for around eight days. They are then removed from the red pulp. In the end, only the white seed remains: whole white pepper .
Which pepper is better - black or white?
Black and white pepper differ not only visually, but also in taste. White pepper is significantly hotter due to the longer ripening time, as the berries are harvested when fully ripe. In contrast to black, green or red pepper, white pepper does not contain any pulp. This means it contains fewer essential oils.
